Bacon Wrapped Stuffed Chicken


With the right ingredients ‘fun’ almost always relates to more ‘fun’, and this dish is no different. Keeping with the theme of this plate, we thought it would only be best to start with a story.

Once upon a time, on a little country farm. A green asparagus grew stretching up for light, Then along came the chicken pecking the ground with much delight. Unfortunately, the careless pig who was not watching his steps, ‘stumbled’ and ‘squashed’ making a feathery mess. This summoned the farmer to an unfortunate event, but with a spark of inspiration, he thought up this marvelous bacon-wrapped creation.

Though our story may not be so great, this dish is sure to have everyone asking for another plate!

How did we make it? We started with your standard chicken breast. No bells maybe a whistle if cooked just right. That just won’t cut it, so next comes the ‘stuffing’.

With this process lets first find some cheese and a spear of asparagus (for moisture), slit into the chicken breast and add cheese to your heart’s desire.

Once full of cheese and asparagus it’s time for some ‘closure’ ; roll up that breast and finish with a quick buttery bath (of your favorite grass-fed butter).

You are now ready for the final performance before the heat.

As you season and wrap each piece of bacon around the breast, I usually finish with a toothpick to hold each bracelet of pork together, wrap them side by side until out of bacon, chicken or both.

If the oven is hot and your pan is loaded, you are now ready for the ‘bake off’.

Enjoy this extravagantly juicy bird for lunch, dinner, or maybe even breakfast if you are as crazy as that old farmer we first talked about in the tale.

  • 2 Chicken Breasts
  • 4 tbsp Goat Cheese or Cheddar Cheese
  • 2 spears Asparagus
  • 4 slices Bacon
  • Himalayan Salt to taste
  • Pepper to taste

Instructions
  1. Preheat Oven to 350F.
  2. Make a Slit down the side of each Chicken Breast
  3. Stuff the middles with asparagus and cheese
  4. Close the Breasts and Wrap 2 slices of bacon around each breast.
  5. Secure with toothpicks to keep closed while baking
  6. Place Stuffed Breasts in a baking dish and bake for 40 mins, untill chicken is cooked all the way through.
