A bite into this lemon thyme square might not change your reality but it will surely ignite your taste buds. Taking a step back in thyme, actually last week to be exact. We remember an evening where we found complete enjoyment in not only our taste buds but also our experiences.
Our neighbors had invited us over for dinner and we hadn’t yet figured out what to bring our hosts. Being caught up in a rush filled day, our evening dinner engagements were beginning to loom, we needed an idea and it needed to be delicious!
Now living outside the box of ‘normal’ we had to raise the bar to a whole new level, it was time to step up and not just live keto but enjoy it as well.
As we were pondering these thoughts, an idea sparked in our mind – a new creation of sorts. It was a dessert but how to make a keto-friendly dessert that ‘non-keto’ folk would like too? It came to me… Lemon Thyme Cheesecake Bars. A keto friendly delight!
Not only do these bars look great, but they were also a hit at the dinner party! Best of all, no one even knew they were Keto!
Here’s how I made them:
Mix the wet ingredients in a bowl to make a batter
Spread the batter into an 8′ square baking pan. Bake for 20 minutes at 350.
Let Cool completely. Spread Icing on top then cover baking pan with foil, plastic or beeswax wraps. Put in the fridge for at least an hour. Before cutting.
Garnish with fresh thyme sprigs and a couple of fresh berries. Then share with your loving family, friends or neighbors!

- 4 tbsp Cream Cheese Softened
- 1 tbsp Butter Softened
- 1/4 cup Almond Flour
- 1/2 tsp Vanilla Extract
- 2 Eggs
- 1 tsp Thyme Sprigs Fresh
- 1 tbsp Lemon Juice Fresh
- 1/8 tsp Baking Powder
- Stevia To Taste
- 8" Square Baking Pan
- 2 tbsp Cream Cheese
- 1 tbsp Butter
- 1/2 tsp Vanilla Extract
- Stevia to taste

- Preheat Oven to 350 Degrees
- Grease 8' Square Baking Pan with Butter
- Combine softened cream cheese and butter together in a bowl and mix.
- Add in Flour, Vanilla Extract and Baking Powder.
- Add Stevia until the desired sweetness.
- Spread Mix into Baking Pan
- Bake for 20 minutes at 350 Degrees
- Let Cool, before adding icing.
- Spread Icing on Top, then cover baking pan with Foil, Plastic or Beeswax Wrap
- Place in fridge for at least an hour, before cutting into squares.
- Cut and Garnish with fresh thyme sprigs and a couple of fresh berries.
