Ingredients
4Cornish Hens
4-8SlicesBaconthick cut
1BunchDilllarge
3Lemonscut into wedges
Sicilian Spice Rub
1tbspPaprikapowder
1tbspGarlicpowder
1/2tspAll Spicepowder
1/2tspSalt
1/4tspPepperfresh cracked
1/4tspNutmegpowder
pinchhot chili flakesfresh sliced or dried
Instructions
Preheat Oven to 350 Degrees and place Cornish Hens in a roasting pan.
Stuff the cavity of the hens with the lemon wedges.
Combine all dry rub ingredients in a bowl.
Rub the the dry rub on the outside of the hens.
Tip: rub a little bit of olive oil or water onto the hens first, if they dry rub isn’t sticking well.
Take a large handful of dill and place it on top of the bird, carefully using a slice of bacon to secure it in place. Use a toothpick to help keep the bacon in place. You can optionally add another slice of bacon if you desire.
Cover the hens and place them in the oven to bake for 40 mins at 350 degrees.
Once hens are cooked, pull them out and serve with a drizzle of olive oil, dill and lemon wedge to garnish.
