Ingredients
6Eggs
1/4cupRed or Yellow Pepperchopped finely
1/4cupspinachchopped
2tbspOnionchopped
1/2cupCheeseshredded
Salt & Pepper
Hot Sauceoptional
Instructions
Preheat Oven to 350 Degrees.
Mix Together all ingredients in a bowl.
Butter / Grease the sides of a muffin tin.
Pour the egg mixture into each of the muffin tins, filling them about half to three-quarters of the way.
Bake in oven for 10-12 mins, they should rise slightly.
Let them cool for about 1 min, then take a butter knife around the edges to gently break the egg-bite away from the pan.
Gently lift the egg-bites out of the muffin tins, Serve on a Plate or place in container for storage in the fridge!
