Rustic Seed Bread (Keto Bread)

This lovely keto-friendly seed bread is rustic and nutrient dense. You can almost feel the vibrations from it, like it has a life of its own! This seed bread is a great option for your keto diet.

A single slice is quite filling and full of healthy fiber so you won’t feel like you want a whole lot. It’s great to use as a traditional piece of toast with some almond butter or you can go as far as to use it for a sandwich.

One thing with keto is that traditional bread is no longer an option. I think most people (before keto) probably noticed that wheat products didn’t quite settle right with them (some worse than others). An interesting fact is that the traditional strain of wheat when studied has a radically different DNA code than what we consider wheat today. It’s a completely different plant, we just call it the same name.

Now, I’m not sure that traditional wheat was low carb, but what I do know is that the portions of which grains were consumed were in small amounts, not in the large quantities that we currently consume them in. Seeds and nuts we consumed a little more frequently and that is why this seed bread is perfect!

This bread is made mainly using ground sunflower seeds, flax seeds, pumpkin seeds, and hemp hearts. If you can find sprouted seeds that is even better. If you can’t find pre-ground versions of some of the seeds you can easily use your coffee grinder or food processor to do the trick.

  • 3/4 cup ground pumpkin seeds
  • 3/4 cup raw sunflower seeds
  • 3/4 cup ground flaxseeds
  • 1 cup ground hemp hearts
  • 3 tbsp ground chia seeds
  • 3 tbsp Psyllium Fiber
  • 1 1/2 cups water
  • 1 1/2 tbsp Coconut Oil
  • 1 1/2 tbsp Butter
  • 1 tsp Salt

Instructions
  1. Combine all ingredients in a bowl.
  2. Let sit for 30-40mins.
  3. Preheat the oven to 350 F.
  4. Line a loaf pan with parchment paper.
  5. Pour batter into the pan and bake 1 hour.
