Yummy Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps or the “TCLW”  are tasty keto explosions! This modern-day dish has graced the tables of travelers, foodies, gluten-free, paleo and all taste buds in-between. This time we’ve made it Keto, an even more modern adventure just waiting for you to take your very first bite.

Before we saw the Keto ‘sunrise’, something like this would have come to us in a submarine sandwich. No, it doesn’t have a 12″ inch bun, but we challenge you to not like it better! A Carb-less, Nutritious and Delicious way to re-experience what used to be a Thai Chicken Wrap (seemed harmless and healthy at the time). We are not so naive anymore, we know that what we put in our bodies does matter and we care about the quality of the fuel that goes in.

From the diet we eat to the thoughts in our heads we must keep very conscious of what we choose to put in ourselves and this lettuce wrap is a small (but mighty) step in the right direction. We took some time to re-think this favourite and make it into something truly Keto and truly GOOD!  With healthy fats, all the right flavours we’re certain it will have you and your friends asking for more! A guaranteed crowd pleaser, and the best part you don’t have to cheat to have yummy food!

  • 1 lb Ground or Shredded Chicken
  • 2 tbsp Butter
  • 2 tbsp Soy Sauce
  • 2 tbsp Almond Butter
  • 1 tbsp Garlic chopped
  • 1 tbsp Ginger fresh grated
  • 1 tsp Siracha Sauce
  • 1/8 tsp Red Pepper Flakes
  • Himalayan Salt
  • Butter or Romaine Lettuce Leaves
Garnishes
  • Green Onion chopped
  • Cilantro fresh chopped
  • Red Pepper sliced
  • Sesame Oil drizzle
  • Lime Wedge

Ingredients
  • 1 lb Ground or Shredded Chicken
  • 2 tbsp Butter
  • 2 tbsp Soy Sauce

Instructions
  1. In a skillet combine all ingredients except for garnishes. Simmer on low/medium until chicken is fully cooked. Use Lettuce Leaves as wraps and add filing to center. Top with Cilantro, Green Onion, Red Pepper, Sesame Oil and a Lime Wedge.
